Mangodo salsa

Category :Vegan, Jain, low fat, gluten free, Nut free

Preparation Time : 15 min.
Skill level : easy

Ingredients :
1/2  diced avocado
1 tbs onion semi-finely chopped
1 tbs red capsicum semi-finely diced
1/2 semi-ripe mango diced
8-10 sprigs of cilantro finely chopped
2 ts sugar (if mango is sweet then 1 ts)
1/2 ts green chili finely cut
salt as needed
1 tbs lemon juice

1. Mix all the ingredients.
2. Serve with chips

Veggie Mango Raita

Category :Vegan, Jain, low fat, gluten free, Nut free


Preparation Time : 15 min.
Skill level : easy

Ingredients :
1 tbs finely diced carrots
1 tbs onion finely chopped
1 tbs capsicum finely diced
2 tbs cucumber finely diced
3 tbs ripe mango diced
8-10 sprigs of cilantro finely chopped
1 ts sugar
1/4 ts green chili finely cut
pinch black salt
pinch peppercorn
salt as needed
3 c yogurt

1. Mix all the ingredients except yogurt.
2. Whisk yogurt for smoother texture.
3. Mix everything together.
* If mangoes are not available, you can replace it with 1 ripe banana.
* For vegan option you can take coconut yogurt instead of regular yogurt.

BBQ Banana

Preparation Time : 5 min.
Cooking Time: 10 min.
Skill level : easy

Ingredients :
2 tbs tandoori masala
1 tbs chick pea flour
2 water
salt if needed
3 Banana ripe cut lengthwise and halved then

1. mix tandoori masala, flour, pinch salt and water.
2. Marinate banana in masala paste for 5 min.
3. grill or bake at 350 degree f for 4 min in preheated oven.
4. turn and grill or bake for 3 min.

Red Velvet

Ingredients :
1 c Prickly pear juice
10 cubes kiwi ice
1 ts mint very finely shreded
1 ts salt

1. Mix and spread mint and salt evenly in a bowl or small plate.
2. Wet rim of your glass and dip it into salt powder
3. feel the glass neatly with grape juice and serve with orange juice ice.

* for making kiwi ice you can freeze fresh kiwi peeled and sliced and quartered.

2 cubes Orange juice ice
1 ts salt
1/4 ts ginger powder
1/4 ts crushed dry mint

1. Mix salt, mint and ginger powder and spread evenly in a bowl or small plate.
2. Wet rim of your glass and dip it into salt powder
3. feel the glass neatly with grape juice and serve with orange juice ice.

* for making orange juice ice you can freeze fresh orange juice in a ice tray.

3 tbs nawabi tandoori masala
2 tbs coconut water
10 pineapple rings
salt if needed

1. mix nawabi tandoori masala and water.
2. Marinate pineapple in masala paste for 30 min.
3. grill or bake at 350 degree f for 7 min in preheated oven.
4. turn and grill or bake for 5 min.
* If you don't have coconut water you can use water also.

Vegetarian BBQ

Category :Vegetarian, Jain, low fat, gluten free, Nut free

Preparation Time : 5 min.
Cooking Time: 15 min.
Skill level : easy

Ingredients :
3 c yogurt
3 tbs tandoori masala
1 green capsicum 1" squares
1 red capsicum 1" squares
1 onion 1" squares
200 gm paneer  1" squares
1 zucchini halved and cut 1" length
100 gm cauliflower big florets
5 baby potato cut in half
10 cherry tomato
salt if needed

BBQ skewers 5

1. Mix yogurt, salt with tandoori masala.
2. Marinate vegetables for 1/2 an hour in tandoori mix.
3. Thread vegetables on skewers.
4. Grill them.
5. If you do not have grill don't use skewers,  just broil the vegetables on bottom rack for 5 min (till little brown) in heated oven then turn then broil again till little brown. Then thread a couple on toothpick and serve.

Tandoori Masala

Preparation Time : 5 min.
Cooking Time: 7-8 min.
Skill level : easy

Ingredients :
To roast:
1 ts oil
2 tbs coriander seeds
1 tbs cumin seeds
1 ts carom - ajawain seeds
15 clove
2 ts fennel seeds
1 ts sesame seeds
2 big cardamom
1/2 ts fenugreek seeds
1/2" dry ginger
3-4 red chilies (you can adjust spiciness according to your taste)
2 ts turmeric
1/2 ts asafoetida
20 mint leaves
1 tbs besan (chick pea flour)
salt as needed

1 tbs  sesame seeds

1. In a wok roast all the roasting masala for 7-8 min at medium low heat.
2. Let it cool.
3. Powder everything together.
4. Mix sesame seeds.
4. store in a airtight container.

Nawabi Tandoori Masala

Preparation Time : 5 min.
Cooking Time: 7-8 min.
Skill level : easy

Ingredients :

3. Powder everything together.
