Grilled watermelon granita

Category :Vegan, fat free, gluten free, Nut free
Preparation Time : 5 min.
Cooking Time: 10 min.
Skill level : easy

Ingredients:
2 slice sweet water melon rounds
1/2 ts chili flakes
10 mint leaves
1 tbs lime juice
1 ts himalayan pink salt

1 martini glass

1. Grill watermelon each side for 4 min. at medium low heat.
2. When it cools down freeze it.
3.  After 6-8 hours crush water melon (ice crush setting) with chili flakes and mint.
4. Apply lemon juice on a martini glass rim.
5. Take some salt in hand and dip the rim(Careful not to get finger prints on glass).
6. Pour granita in glass.
7. Decorate with lime slice and mint and Serve.

Jicama black bean salsa

Category :Vegan, fat free, gluten free, Nut free
Preparation Time : 15 min.
Cooking Time: 5 min.
Skill level : easy

Ingredients :

1 small jicama finely chopped
1/2 c onion finely chopped
1/2 c cooked black beans
1/2 ts roasted garlic  finely chopped
1 tbs cilantro finely chopped
1 tbs roasted corn kernels
1 tbs lime juice 
1 tbs  tomato finely chopped
1 ts red chili powder
salt as needed

1. Mix the ingredients.

2. Serve.

Grilled pineapple salsa

Category : Vegan, fat free, gluten free, Nut free
Preparation Time : 5 min.
Cooking Time: 6 min.
Skill level : easy

Ingredients :
3 slice fresh pineapple
1/2 c onion finely chopped
1/2 ts roasted garlic  finely chopped
1 tbs cilantro finely chopped
1 tbs lemon juice 
1 tbs brown sugar
1/2 ts green chilies finely cut (jalapeno)
1/2 ts red chili powder
salt as needed

1. Grill pineapple 3 min. each side at medium heat.
2. When pineapple cools down enough to handle chop finely.
3. Mix Ingredients.
4. Serve.
