Puffed rice snack - chat

This chat is simple to make yet very yummy. My mom used to make for us, when we were small and my kids equally love it. When my mom is around, my kids keep asking her to make this one and she will make big bowl full and it will disappear within minutes, still if you look at them eyes will be saying "Can eat even more".

Preparation Time : 15 min.

Ingredients:

2 tomatoes, finely chopped
1/2 red or white onion, finely chopped
1 tbs cilantro, finely chopped
1 tbs pomegranate seeds
1 tbs raw mango, finely chopped(optional)
1/2 ts asafoetida
1 ts red chili powder
1 ts peanut oil
1 tbs roasted salted peanuts
1 tbs lime juice
salt as needed(careful, puffed rice has some salt)
2 c puffed rice

1. Mix ingredients except puffed rice.

2. Just before serving mix puffed rice( otherwise it will be soggy).
3. Serve immediately.

Grilled Paneer Tikka Burger

Preparation Time : 10 min.
Cooking Time: 10-15 min.
Skill level : easy

Ingredients:
1 tbs  No Fuss BBQ masala
1 ts ginger garlic paste
1 c Yogurt
1/2 lb skim paneer cut in to 3" square slices
1 ts olive oil
1/2 ts garlic powder
1 ts finely cut cilantro
salt as needed
1  portobello mushroom,
2  bell pepper (small), sliced big
1  sliced onion,
2  romaine lettuce leaves, end trimmed
2 Whole wheat burger buns
1 tbs vegan mayo
1 tbs Mint chutney



1. Mix BBQ masala, ginger garlic paste and yogurt.
2. slowly put paneer slices, be careful not to break it.
3. Marinate for 1/2 an hour.
4. Mix olive oil, salt, garlic powder and cilantro.
5. Brush oil mixture on veggies.
6. Leave it for 15 min.
7. Grill paneer and veggies on grill pan.
8 Arrange lower burger bun on the chopping board.
9. Apply mint chutney on inner side and grill bun lightly.
10. Then arrange lower burger bun, grilled veg, add any salt pepper you want.
11. Add mayo and cover with top of the bun.
12. Enjoy while warm.

Ingredients :

1 whole fresh corn 
1/2 c onion finely chopped
1/2 ts roasted garlic  finely chopped
1 tbs cilantro finely chopped
1 tbs lemon juice 
1/2 c tomato finely chopped
1/2 ts green chili finely cut (jalapeno)
salt as needed

1. Heat BBQ and roast garlic and corn till done.

2. Let it cool.
3. Take the kernels out.
4. Mix the ingredients.
5. Serve.

Grilled burrito

Vegan Grilled burrito.... Is n't the name enough to feel yummy? But believe me this one is yummier than it sounds :}

Ingredients:
4 whole grain burrito tortilla
1 grilled semi ripe mango, sliced
2 grilled zucchini flower halved lengthwise or 1 grilled sliced zucchini,
1 grilled bell pepper, sliced
1 grilled onion, sliced
1 grilled avocado, sliced
1 grilled romaine lettuce, sliced
1 grilled tomato, sliced
1 c grilled corn salsa,
1 c BBQ beans
4 tbs vegan mozzarella cheese (optional)
salt

1. Arrange tortilla on dry chopping board.
2. Add grilled ingredients, salsa and beans.
3. Wrap tortilla tightly to make  Nice burrito
4. Grill the burrito.
5. Serve.

* To grill ingredient toss them with 1 tbs olive oil, salt, oregano. Leave it for 15 min. Grill them.
* for zucchini slice lengthwise and grill all other ingredients first grill then slice.





BBQ beans soup

Cooking Time: 5-10 min.

Ingredients:

2 c BBQ beans
1/2 c corn
2 c water
1 ts red chili powder
salt as needed
1 ts lemon juice
1 tbs finely chopped cilantro

1. Boil everything except cilantro together till water blends well for 5-10 min.
2. add cilantro, cover for 5 min.
3. serve.

Ingredients:
1 bell pepper grilled and chopped 
1 garlic roasted and chopped
1 onion grilled and chopped
2 tomato grilled and chopped
1  small cucumber grilled and chopped
2 c boiled and mashed black or pinto beans
1 ts oil
1 ts cumin powder
1 ts Carom seeds
1 ts red chili flakes
1 ts oregano
salt as needed
1/2 c cilantro finely chopped

1. Heat oil at medium heat.
2. Add cumin, carom and chili flakes.
3. Add garlic and onion and cook for 2 min.
4. Add tomato, bell pepper and cucumber and cook it for 5 min.
5. Add beans and cook till thick consistency of mashed potato.
6. Mix cilantro.
7. Serve warm.

* For mashed beans Pressure cook soaked beans and drain it completely then mash them.


Moong vadi

You can use this vadi for any curry with dumplings. Summer is the time to make this and store it for a year. People observing raw diet can use this by adding it in hot water and cover. Use it for salad or you can be creative.

Ingredients :

1 c Green batter
salt as needed

1. Mix salt in the batter.
2. Place cleaned cotton cloth in sun.
3. Make vadi by putting 1/2 ts at a time on cloth.
4. Cover it with very thin cloth.
5. Sun dry them til dry or almost dry(then you can keep it inside open to dry)
6. Store.

* Make sure no moisture in air, when you make them and dry completely if you want to store these for longer time.
* You can use this to make curry with dumplings.
* You can store these in cool dry container for a year, so completely worth it.

Green batter

Ingredients :

Batter:
1 c whole Moong 
1/3 c Whole urad
green chilies
1 tbs cumin
1" ginger
10 peppercorns
1 tbs Yogurt
salt

1. Soak moong and urad overnight.
2. Blend everything into semi fine paste.
3. Let it sit for 6-8 hours covered.


*  You can use this batter for making pakoda, appam, idli or dahi vada.
* You can also make crepes batter by grinding it finer.
* You can replace moong with moong dal or chhilakevali moong dal but this one is less processed so better for health. Same way you can take whole or skinned urad or urad dal.

Ingredients:
2 ripe mango, fragrant
1 raw mango sour variety
1/2 ts salt
1/2 ts cumin powder
1/2 ts ginger powder
1/2 ts chili powder
2 tbs honey or according to taste
2 glass ice water

Garnish:
Mint lime ice

1. Rub mangoes with cumin powder, salt, ginger powder and chili powder.
2. Grill mangoes and let it cool down.
3. Blend with rest of the ingredients.
4.  Filter.
5.  Garnish with mint lime ice.

*If you can't find sour mango you can add 1 tbs lime juice.

Grilled Peach Limeade

Grilled peaches makes excellent flavor while chili pepper adds a twist.
Sure hit for your BBQ party.

Ingredients:
2 Peach halved and deseeded
1 tbs honey
1/2 ts salt
1/2 ts chili flakes
1 tbs lime juice.
2 glass ice water
sugar  if needed

Garnish:
Mint lime ice

1. Mix honey, salt and chili.
2. Glaze peach with honey mix and leave it for 1/2 an hour.
3. Grill peaches and let it cool down.
4.  Blend with rest of the ingredients.
5.  Filter.
6. Garnish with mint lime ice.

Mint lime ice

Category : gluten free,  fat free, Vegan
Preparation Time : 5 min.
cooking time 5 min.
Skill level : easy

Ingredients:
2 c water
2 tbs sugar
1 c finely chopped Mint
2 lime sliced

1. boil water and sugar to make syrup
2. cool down
3. add lime slices and mint
4. freeze
You can use this ice for lemonade, orange juice, Jaljira, flavored water or just where ever you want to give hint of lemon.
