Wheat Berries salad

I believe that we should eat least processed food, in that order I choose whole wheat flour over white flour(maida), crackled wheat over whole wheat flour and whole solid wheat over crackled wheat. Generally I make this salad with 1 fruit salad and 1 green salad with some beans and its perfect summer dinner.

Ingredients:
1 c  wheat berries
2 c water
1/4 c chopped walnuts
1/4 c chopped cranberries
1 tbs chopped tangerines
2 tbs lemon juice
1/4 ts tangerine zest
2 ts sugar
salt
pepper

1. cook wheat berries  in pressure cooker for 2 whistle (no need for soaking and you need 1/2 c more water if cooking without pressure cooker(add gradually.))
2. let it cool
3.chop walnuts and cranberries
4. toss everything together
5. serve.

Peanut dressing

Very reach and creamy dressing

Ingredients:
2 Ts peanut butter
1 tbs lemon juice
1 clove garlic
1 red chili soaked for 10 min.
1/4" fresh ginger
zest of one lemon
1 ts agave nectar
salt
pepper

1 ts sesame seeds

1. churn peanut butter, agave and lemon juice
2. for lemon zest you can use peeler but be careful not to include white pith since it's bitter
3. add ginger garlic, chili, lemon zest, salt and make fine paste
4. add sesame seeds for texture
5. use or store in a container for 2-3 days.

Thai cabbage salad

My most  favorite,  flavorful salad and completely desired meal

Ingredients:
1 c cabbage finely cut
1 c carrots, green bell pepper, red bell pepper, red cabbage   julienned
1/4 onion sliced(optional)
2 tbs peanut dressing
salt if needed

Garnish :
salted chopped peanuts
cilantro

1. Toss everything together.
2. Chill if you like
3.Garnish and serve.

Avocado lettuce salad

My favorite salad, nice creamy texture

Ingredients:
2 c romaine lettuce cut
1 avocado cut in 1/4" cubes
6" cucumber diced in 1/4" cubes
10 cherry tomato cut half
1/4 onion diced(optional)
1 tbs lemon juice
salt
pepper

1. Toss lettuce, avocado, cucumber and tomato together.
2. Chill for half an hour (This will make it crispy).
3. When reddy to serve mix lemon, salt, pepper and toss.
4. serve.

*you can substitute romaine lettuce with other lettuce and cherry tomato with 1 regular tomato cut in 1/2" squares

Broccolli salad


Exellent way to eat broccolli.  This salad is good enough as light meal.

Ingredients:
2 c broccolli
1/4 c chopped walnuts
1/4 c chopped cranberries
1/4 onion diced(optional)
1 tbs lemon juice
1 ts sugar
salt
pepper
1. Wash broccolli in sated, warm water with 1/4 ts baking soda since its hard to clean in regular wash.
2. Chop broccoli, onion, walnut and cranberry and mix in a bowl.
3. Chill for half an hour (This will make it crispy).
4. When reddy to serve mix lemon, salt, pepper, sugar and toss.
5. serve.

Ingredients :
 2 chopped tomatoes 
1/2 ts cumin seeds
1/2" ginger
2 ts sugar 
1/2 ts salt
2 tbs peanut powder

1. puree tomatoes, chili, ginger, cumin seeds.
2. add salt sugar and peanut powder and give it a whirl or two.



Coconut Chutney

Skill level : easy

Ingredients : 
1 green chili
1/2 c coconut
1 c yogurt

Garnish:
cilantro

1. Blend coconut, green chili and curd together.
2. add dal powder.
3. garnish and serve.
