Roasted Horse gram Powder (Phutana podi)


Easy to chew version of podi yet completely satisfying

Cooking Time: 5 Min.

Skill level : easy


Ingredients :

1 ts oil (optional)

2 ts urad dal

1 c roasted chana 



2 red chilies (you can adjust spiciness according to your taste)
1/4 ts turmeric

salt as needed


1. In a wok fry urad dal with little oil in the wok for 30 seconds.
2. Add roasted chana,  pepper, sesame seeds, and red chilies and turmeric to the oil keep roasting till it is light golden brown. (Be careful with sesame seeds as they splutters a lot.)
3. When cools down little bit add salt and make powder.
4, Store in an airtight container.

=> For multiplying recipe you don't need extra oil unless it's very large batch.

Mix Dal Powder

Preparation Time : 5 min.
Cooking Time: 10-12 Min.
Skill level : easy

Ingredients :
1 ts oil(optional)
1/2 c chanadal
1/2 c toordal
1/4 c moongdal
1/4 c urad dal
10-12 peppercorns
1/2" of tamarind piece
3-4 red chilli (you can adjust spicyness according to your taste)
1/2 ts turmeric
salt as needed

1.First roast chanadal slightly with or without oil  then add toordal very light brown at medium low heat.
2.Then add urad dal, moongdal, tamarind, peppercorns, and coriander seeds.
3.When it starts to release an aroma and turns goldenish brown, add chilies, turmeric and turn the heat off.
4. Keep moving the ingredients in the wok around otherwise it may burn since wok will be hot.
5. When it cools down, add salt as desired and grind it into coarse powder. (Some people like it fine but I feel the coarse gives more texture and is fragrant.)
6. Store in airtight container.


=> For multiplying the recipe you don't need extra oil unless it's very large batch
* High protein, fat free yet very fragarent 

Dal Powder (Parrupu podi)


This basic powder is high in protein low in fat but still toothsome

Cooking Time: 10 Min.
Skill level : easy

Ingredients :
1 ts oil(optional)
1 c toordal
1/4 c urad dal
2 red chilies (you can adjust spiciness according to your taste)
salt as needed

1. Roast toordal with or without oil very light brown at medium low heat.
2. Then add urad dal peppercorns and coriander seeds.
3. When it start releasing aroma (goldenish brown) add turmeric and chili and turn the heat off.
4. Keep roasting otherwise it may burn since pot will be hot.
5. When cools down add salt as desired and grind it into coarse powder.
Some people like it fine but I feel course gives more texture and is fragrant.

Urad Dal Powder (Ullutham Milagai Podi)


Don't short list of ingredient fool you,  this one is basic but very fragarent

Cooking Time: 6-7 Min.
Skill level : easy

Ingredients :
1 ts oil(optional)
1/4 c urad dal
1 ts rice raw
2 red chilies (you can adjust spicyness according to your taste)
salt as needed

1. In a wok roast urad dal, rice, peppercorns and coriander seeds medium low heat with or without oil.
2.  When it start releasing aroma (goldenish brown) add chili, asafoetida and turn the heat off.
3.  Keep roasting otherwise it may burn since pot will be hot.
4. When cools down add salt as desired and grind it into coarse powder.
(Some people like it fine but I feel course gives more texture and is fragrant.)
5. Store in airtight container.

*Variation: black dal powder - Use whole/ spilt urad  -it takes little longer to cook but totally worth it, healthier version
