Urad Dal Powder (Ullutham Milagai Podi)


Don't short list of ingredient fool you,  this one is basic but very fragarent

Cooking Time: 6-7 Min.
Skill level : easy

Ingredients :
1 ts oil(optional)
1/4 c urad dal
1 ts rice raw
2 red chilies (you can adjust spicyness according to your taste)
salt as needed

1. In a wok roast urad dal, rice, peppercorns and coriander seeds medium low heat with or without oil.
2.  When it start releasing aroma (goldenish brown) add chili, asafoetida and turn the heat off.
3.  Keep roasting otherwise it may burn since pot will be hot.
4. When cools down add salt as desired and grind it into coarse powder.
(Some people like it fine but I feel course gives more texture and is fragrant.)
5. Store in airtight container.

*Variation: black dal powder - Use whole/ spilt urad  -it takes little longer to cook but totally worth it, healthier version

Store in airtight container.

=> For multiplying recipe you don't need extra oil unless it's very large batch.
