Mexican Burrito wraps

Category :vegetarian,  Nut free
Preparation Time : 15 min.
Cooking Time:2-3 min.
Skill level : easy

Ingredients :

4 tortilla 
3/4 c finely cut lettuce
1/2 c Corn salsa
1/2 c  Fajita veggie
1/2 c Cilantro Rice
1/2 c Guacamole
1/2 c cooked Black beans(salted)
1 ts pickled jalapeno
4 ts Mexican cheese blends.
1 ts oil


1. Set tortilla on the chopping board or plate.
2. Fill it with lettuce, veggie, rice, guacamole and beans.
3. top it with pickles and cheese.
4. wrap burrito nice and tight.
5. heat the griddle or grill and brush burrito with oil and toast it for 2-3 min on medium heat.
6. Serve warm.

Fajita Veggie

Category :Vegan, fat free, gluten free, Nut free
Preparation Time : 10 min.
Cooking Time: 10 min.
Skill level : easy

Ingredients :
1 ts oil
1 c sliced red, yellow and green bell peppers
1 c onion sliced
1 zuccini sliced
1 ts crushed black pepper
salt as needed

1. Heat oil and roast bell peppers for 5 min on high heat.
2. Add onions and cook till onion gets brown but still has crunch (2-3 min).
3. Add salt pepper.

Guacamole

Category :Vegan, fat free, gluten free, Nut free
Preparation Time : 15 min.
Cooking Time: nil
Skill level : easy

Ingredients :

1/2 c onion finely chopped
1/2 ts garlic chopped
1 ts cilantro finely chopped
1 tbs lemon juice 
1 tbs tomato finely chopped
1/2 ts green chili finely cut (jalapeno)
2 ripe avocado
1/2 ts chili flakes
salt as needed

1. Remove seed and  peel of the avocado and mash with fork or hand(not too fine texture).

2. Mix the ingredients.
3. Serve.

* Keep it covered since avocado turns dark because of oxidation with air, lemon juice helps here to keep it look fresh and adds taste also.

Corn Salsa

Category :Vegan, fat free, gluten free, Nut free
Preparation Time : 15 min.
Cooking Time: 5 min.
Skill level : easy

Ingredients :
1/2 ts oil
1 c frozen corn
1/2 c onion finely chopped
1/2 ts garlic chopped
1 tbs cilantro finely chopped
1 tbs lemon juice 
1/2 c tomato finely chopped
1/2 ts green chili finely cut (jalapeno)
salt as needed

1. Heat oil and roast corn for 5 min.
2. Let it cool.
3. Mix the ingredients.

*To substitute with fresh corn, take cooked corn.

Mexican Cilantro Rice

Category :Vegan, low fat, gluten free, Nut free
Preparation Time : 15 min.
Cooking Time: 5 Min.
Skill level : easy

Ingredients :

1 ts sunflower oil(or any non fragarent)
1/2 onion finely chopped
1/2 ts garlic chopped
1/2 c cilantro finely chopped
1 tbs lemon juice 
1/2 ts crushed black pepper
2 c cooked and cooled non fragrant long grain rice
salt as needed

1. Heat oil in a wok.

2. Add onion and garlic and saute till light brown.
3. Add other ingredients.
4. Turn the heat off and mix gently.
5. Serve warm.

Tzatziki sauce

Category : low fat, gluten free, Nut free
Preparation Time : 5 min.
Cooking Time: nil 
Skill level : easy

Ingredients :

1 c Greek yogurt or hung curd
1/2 c finely cut cucumbers
2 tbs finely cut mint
2 tbs sugar
2 ts lemon juice
1 clove garlic minced
1/2 ts chili flakes
salt as needed

1. Blend lemon juice, sugar and yogurt with fork.

2. mix other ingredients.
3. serve.
