Coconut Rice

Category :Vegan,  healthy fat, gluten free,
Preparation Time : 5 min.
Cooking Time: 15 Min.
Skill level : easy

Ingredients :
1 ts oil
1 tbs chanadal
1 tbs urad dal
1 ts mustard seeds
3-4 red chilies
10-12 curry leaves
1 onion sliced
1/4 c coconut milk/coconut water
2 c cooked and cooled sona masoori or non fragrant rice
1/2 c finely grated fresh coconut
salt as needed


1. In a wok, heat oil at low heat and roast chanadal.
2. when its light brown add urad dal and mustard seeds,
3. after about 1 min. add  chilies
4. when its light brown add curry leaves and onions
5. when onion is translucent, add salt, coconut milk, coconut and rice, mix gently. 6. Turn heat off and cover for 2 min.

When making a drink, putting ice of the same or any other complimenting flavor, can save it from ruining(Ice adds water to drink so tastes more watery and flavorless). 
You can also make flavored water by adding flavored ice to plain water.

You can even make ice with Syrups by adding some water to it.

Ingredients:
1 c juice

1. take any juice and make ice cubes

Suggestions
-watermelon juice,
-orange juice with orange fragments
-lemonade,
-apple juice with diced apples
-mango juice for mango lassi, or for mocktails

Citrus Ice

Ingredients:
2 c water
2 tbs sugar
1 c finely chopped lemon rind, orange rind or slices

1. boil water and sugar to make syrup
2. cool down
3. add citrus rinds or slices
4. freeze
You can use this ice for lemonade, orange juice, Jaljira, flavored water or just where ever you want to give hint of lemon.

Very Berry Ice

Ingredients:
2 c water
2 tbs sugar
1 c berries
1 lemon zest

1. boil water and sugar to make syrup
2. cool down
3. add berries and zest
4. freeze
5. use 2-3 cubes for 1 glass of juice
6. you can use different melons to give colors to ice

you can choose any combination to make ice:
-finely diced or sliced strawberries
-whole blue berries
-whole raspberries
-1/2 cut blackberries
-whole blueberries and raspberries mix

you can use this ice for lemonade, pink lemonade or flavored water or for clear soda.

Melon Ice

Preparation Time : 5 min.

Ingredients:
2 c water
2 tbs sugar
1 c finely diced melon

1. boil water and sugar to make syrup
2. cool down
3. add melon dices
4. freeze
5. use 2 cubes for 1 glass of juice
6. you can use different melons to give colors to ice

you can choose any combination to make ice:
-watermelon
-honey dew
-sun melon
-cantaloupe
-2-3 melon mixed
and to make juice.

Kachha Mango drink

My mom used make this delicious drink which is also good for sun stroke. We absolutely love this one.

Ingredients:
2 ts raw sour mango peeled and cut
1 ts cumin seeds
2- 1/8"slices of ginger
1 ts black salt
2 tbs sugar
1/4 c + 1 c water
salt if needed

1. boil mango, cumin seeds, ginger in 1/4 c water for 5 min.
2. blend, filter
3. add remaining water salt, sugar
4. chill, serve

Aambalvanu

Again good for sun stroke.

Ingredients:
2 ts Tamarind washed and soaked and seeds removed
1 ts roasted jira
1 ts black salt
1 tbs jaggery
1/4 c + 1 c water

1. boil everything except 1 c water for 5 min.
2. blend, filter
3. chill it with remaining water and serve

Kokum Cola

We all know that soft drinks are hard on health. This is something equally delicious and healthy. Kokum are very good for summer since it saves us from sun stroke and very good for fat liver(gift of today's inactive lifestyle). People with joint issues should drink it in moderation since sour makes joint sour. Kokum is relative of super fruit mangosteen

Ingredients:
10-12 black kokum (Garcinia indica) washed and soaked in water
1/2 c water
1 ts roasted cumin seeds
1 ts roasted carom seeds(ajwain)
sugar as needed
1/4 ts black salt
1/4 ts salt
2 c soda

1. Boil kokum, cumin, carom seeds.
2. Add sugar and salts. Chill.
3. Filter while serving and add

If you want it aerated
1. take water to 1/2 c and boil till 1/4 c left
2. filter
3. add salts and sugar
4. chill
5. while serving add soda or water.
