Fennel Seeds Powder - Sombu podi

Category :Vegan, Jain, fat-free (oil optional), gluten-free, nut free, rich in protein
Preparation Time : 5 min.
Cooking Time: 15 Min.
Skill level : easy

Ingredients :
1 ts oil (optional)
1/2 c toordal
1/4 c urad dal
1/2 c fennel seeds
10-12 peppercorns
3-4 red chilies (you can adjust spiciness according to your taste)
1/2 ts turmeric
salt as needed

1. First roast toordal very light brown at medium low heat, with or without oil
2. Then add urad dal, fennel seeds tamarind and peppercorns.
3. When it starts releasing an aroma and turns golden-brown, add chili and turmeric
4.  Continue roasting for another 1 min and turn the heat off.
5.  Keep moving the ingredients in the pot around otherwise it may burn since pot will be hot.
6. When it cools down, add salt and grind it.
8. Store in airtight container.

=> For multiplying the recipe you don't need extra oil unless it's very large batch

Jeera Powder

You can use this with ghee to season rice or you can add rasam  to make jeera rasam or add it in yogurt with cucumber to make raita.

6. When it cools down, add salt  and grind it into fine powder. (not very fine)

Green apple curry



Category :Vegan, Jain, low fat, gluten free

Preparation Time : 5 min.
Cooking Time: 7-8 min.
Skill level : easy

Ingredients :
1 ts oil
1/2 ts mustard seeds
1/2 green chili seed and stem removed and cut
1 big green apple chopped
1 tbs red bell pepper chopped
1 tbs fresh green chana (I took frozen one)
1 tbs suffing powder
2 ts sugar
salt as needed

1. Heat oil in a wok and add mustard seeds.
2. When mustard seeds pops add green chili, apple, pepper and chana.
3. after 2-3 min, add stuffing powder, salt and sugar.
4.  cook for 1 more min. moving contents continuously.
5. Serve warm.

*if you can't find green delicious apple you can take kind of raw apple.

Mint Chutney

Category :Vegan, low fat, gluten free, Nut free

Preparation Time : 10 min.
Cooking Time: nil
Skill level : easy

1/2 c green onion washed and cleaned with green part
1/2 c mint washed and cleaned
1 slice bread
1 clove garlic
2 tbs lemon juice
1 green chili
1/4 ts black salt
salt as needed

1. Blend all the ingredients together into fine paste.
2. Serve and keep refrigerated for 2-3 days.


Tandoori Paneer

Category : low fat, gluten free, Nut free

Preparation Time : 5 min.
Cooking Time: 15 min.
Skill level : easy

Ingredients :
3 tbs nawabi tandoori masala
2 ts ginger garlic paste
1 c yogurt
salt if needed
2 c 1" cubes of paneer

1. mix nawabi tandoori masala and ginger garlic paste and yogurt.
2. Marinate paneer in masala paste for 30 min.
3. grill or bake at 350 degree f for 7 min in preheated oven.
4. turn and grill or bake for 5 min.


Kachumber

Kachumber is a finely cut spiced veggie mix (relish type)

1 tomato finely cut

1 onion finely cut
1/4 raw mango finely cut
1/2 c cucumber finely cut
1 ts red chilies powder
1 ts cumin powder
1 ts sugar
2 ts lemon juice
1/4 ts black salt
salt as needed

1. Mix all the ingredients

2. Serve.

Lavash Wraps


Category :vegetarian,  Nut free
Preparation Time : 15 min.
Cooking Time:2-3 min.
Skill level : easy

Ingredients :

4 lavash  (I have used roti)
1 c hummus(hummus heaven)


3/4 c finely cut lettuce
1/2 c sliced tomato
1/2 c sliced onion
1/2 c sliced yellow, red and green bell peppers


3/4  c Tzatziki sauce


1/2 ts peppercorns powder
salt as needed


1. Set lavash on the chopping board or plate.

2. Spread hummus.
3. top it with lettuce, tomato and bell pepper.
4. Add salt pepper for veggie part.
5. wrap lavash softly but nice and tight.
6. Enjoy.
