Stuffed (Not so bitter) bitter melon curry


Bitter melons are very good for health but how many people can enjoy them?  Probably very few.  Either we have to put two much sweetener or oil or we get rid of skin or seeds or we just have to eat it because it's good for us, then it doesn't serve the purpose, but this recipe doesn't call for either and here we are not throwing away any part of bitter melon but still very delicious.

Preparation Time : 5 min.
Cooking Time: 30 min.
Skill level : intermediate 


Ingredients:
4 small bitter melon
6 tbs suffing powde
1 ts oil
Garnish : cilantro, shredded coconut

1. Cut bitter melon lengthwise. 

2. Remove the pulp. Keep aside.
3. Stuff bitter melon with 4 tbs stuffing powder.
4. Bake bitter melon at 300 degrees for 20 min.
Or
Pressure cook for 1 whistle and open in 5 min.
Or 
Steam it
(Basically, bitter melon should be just cooked not more)
5. in a wok heat oil and cook bitter Melon for 5 min. 
6. Add pulp and seeds and cook for another 5 min.
7.  Add remaining stuffing powder and cook for 2-3 min.
8. Garnish and serve.
