Methi Pudala - Crepes




Category :Vegan, low fat, gluten free, high in protein
Preparation Time : 10 min.
Cooking Time: 15 min.
Skill level : intermediate

Ingredients :

2 c fine kala chana besan (whole chickpea gram flour)
1 c finely chopped fenugreek
1 tbs garlic, finely chopped
1/2 c onion, very finely chopped
1 green chili, finely chopped
1 tbs cilantro, finely chopped
1/4 ts asafoetida
1 ts turmeric
1 ts red chili powder
 water as needed
salt as needed

oil as needed

1. Mix all the dry ingredients.
2. Pour water just enough to make pourable (but not watery) consistency smooth batter.
3. Heat griddle on medium high heat.
4. Pour approximately. 2 tbs batter with big spoon when griddle is hot, and spread thinly.
5. Add 1 ts oil around the crepe.
6. When its golden brown move the flat spoon around and fold it and take it out.
7. Repeat. Serve warm, with raita or sweet n spicy chutney.

*if batter doesn't feel smooth, you can leave it for few min. it will be smoother or make it ahead of time.
* You can stuff upma or poha or dry curry (like potato or paneer or mix veg.) to make it richer meal.

Watermelon Julep

Preparation Time : 5 min.
Cooking Time: 5-10  min.
Skill level : easy

Ingredients:
1 c watermelon juice
1 tbs Mint syrup
3-4 lime slices, seeds removed
8 cubes Mint lime ice
2 drop ginger juice

1. In a shaker add ice.
2. Add syrup, ginger, lime slices.
3. Add watermelon juice.
4. Serve in salted rim globe glass.

Ginger Julep

Preparation Time : 5 min.

Skill level : easy
Serves : 1

Ingredients :
1 tbs lemon juice
1/2 ts Ginger juice
1 tbs agave
1 c water
1 tbs finely chopped Mint
8-10 Mint lime ice cubes

1. In a shaker add ice.
2. Add other ingredients.
3. Shake vigorously.
4. Serve.

*For making ginger juice, finely grate ginger and squeeze through cheese cloth or strainer.

Red, white and blue lemonade

This lemonade has magical look. When you pour grenadine syrup over ice some of them will stay on ice then when you add lemonade it creates spreading hues of red from the blue rock like ice and as ice melts the blue will start turning in to purple because of acid reaction and mixing of grenadine.

Ingredients :
1 tbs lemon juice
1/2 ts Ginger juice
1/2 tbs white sugar(Otherwise hue will change)
1 c water or soda
2 tbs All natural Grenadine syrup
8-10 blue ice

1. Mix lemon juice, ginger juice and sugar.
2. Let the sugar dissolve.
3. Add water or soda
4. In a tall glass, add blue ice then grenadine syrup.
5. Add light ginger lemonade.
6. Serve.

*For making ginger juice, finely grate ginger and squeeze through cheese cloth or strainer.


Blue Ice

Preparation Time : 5 min.

Ingredients :
1/2  c blueberries
1/2 c blue grapes
1 tbs lemon juice
salt pepper

1. Blend everything to smooth paste 
2. Pour it in ice tray.
3. Put it in freezer section to make ice.

Bottle gourd thepala

Category : Vegan, healthy fat
Preparation Time : 5 min
Cooking Time: 15-20 min
Skill level :  Intermediate

Ingredients :
1/2 c fresh bottle gourd, grated
1/4 c Cilantro, finely chopped
1 ts turmeric
1 ts red chili powder
1 tbs sugar
1 tbs lemon juice
1 ts green chili paste
1/2 ts asafoetida
1 ts salt or as needed
water  only if you need
1 tbs chana flour
1 tbs rice flour
1 c whole wheat flour
oil as needed

1. Mix everything but the flour and oil.
2. Add flour and make semi stiff dough (if needed add more flour or water for right consistency)
3. Make walnut-sized spheres of dough.
4. Flatten the sphere and roll it into thin 6-7"  circle (use dry flour for dusting or it will stick).

5. Heat griddle on medium heat and when hot enough (to check put a pinch of flour on the griddle and check if it turns golden-brown) carefully place the thepala on the griddle .
6. After 10 seconds, flip it over.
7. After 10 seconds, dip spoon in the oil and spread over the thepala(2-3 drops oil)
8. Flip again and after until it has golden brown spots on both sides.
9. Repeat till done

*To make soft thepalas adjust your heat just right. If its too much you will get burns and spots will quickly turn black and if it's too low it will take longer and will be chewy not soft.
* If you think your rolling speed is not fast(For thepala you need more speed than roti or paratha) you can turn heat on only after rolling 2-3.  
*If you let the dough rest, it might turn softer, add some flour and need it again.

Mint Thepala

1 ts red chili powder
1/2 ts asafoetida
garlic paste(optional)
1 ts salt or as needed
1 c whole wheat flour
water as needed to make dough
oil as needed

1. Mix everything but the flour and oil.
