Ingredients:
1 c couscous
1 c hot broth
1/4 c finely chopped tomato
1/4 c finely chopped onion
1 tbs finely chopped parsley
2 tbs lemon juice
1 ts olive oil
salt as needed
1. Add couscous in a 3 cup bowl with hot water and cover.
2. Let it stand for 5-7 min.
3. Add olive oil and fluff with fork.
4. Toss everything together
5. Serve.
